Happy Sunday and we’re officially well into February. The air is cool and crisp this morning and things feel so clean and fresh from all the rain. The mountains are snow-capped in the distance and the rolling his are tumbling with green — it’s pretty gorgeous in Southern California. This week’s menu is filled with ideas to make for Super Bowl Sunday next weekend, so maybe get a head start during the week to put you in the mood for the big game, and whip up some fun finger foods to enjoy.
On Monday, I thought it would be nice to create my Parmesan Chicken Fingers with Basil Lime Dipping Sauce. The crispy coating is just enough for the perfect crunch and they’re pan sauteed, not deep fried, for a cleaner taste. Tuesday night is definitely taco night and my Tamarind Chicken Tacos have a tangy delicious bite that you shouldn’t miss. Grab some tamarind paste online and so you can prepare these delightful tacos. Hump Day is a good night for a hardy vegetable dip like this Roasted Eggplant and Onion Dip. It pairs beautifully with a Pinot Noir or dry white wine. Thursday is all about sandwiches and my Grilled Steak, Shiitake and Brie Sandwiches are a blast to enjoy for dinnertime. You can use an indoor grill pan, if it’s too cold to venture outside. TGIF and it’s time to get in relax mode with this Lemon Cucumber Vodka Gimlet — it will do the trick. Saturday’s are for baking, and my Heart-Shaped Devil’s Food Cake with Raspberry Buttercream is so perfect for Valentine’s Day or Galentine’s Day! Have a good week.
