Happy Sunday everyone. It’s a lovely weekend here in Los Angeles with blue skies that look so crisp and clean from all the rain. The weather is colder than usual, but I’m making good use of my sweaters, which often rarely get worn. Many of you have already fallen off the diet wagon this month, but don’t worry — just focus on preparing and enjoying good flavorful food with nutritious ingredients, and you will be just fine.
Monday is a Chicken Pot Pie Penne Pasta night and I couldn’t be more excited. It’s a lightened up version of a classic, and doesn’t miss a beat on flavor. Tuesday is taco night, of course and my Mexican-Style Brown Rice goes great with anything you may be rolling up in a tortilla. Wednesday is fish night and my Salmon & Broccoli Dijon is simple food that is so tasty. It’s made in one pan in minutes and tastes restaurant quality. Thursday night I’m really craving my Crispy Shrimp & Avocado Salad because it’s crispy, creamy and so perfect for any meal. Friday is all about unwinding and Baked Feta with Sundried Tomatoes and Kalamata Olives is a one pan wonder – just toss it in a casserole dish and bake. I like to serve it with a crunchy baguette or rustic crackers. Saturday’s are for baking and my Nutty Polenta Cake is so divine — just in case you missed it. Have a happy week.
