Well, it’s “prep day,” for me. Not meal-prep day, but Miralax and Gatorade with clear liquids prep. I think most of you know what I’m talking about. Not going to enjoy this, but I will get through it. I’d rather talk about recipes and what all of you will be enjoying today, instead of me. However, come Monday afternoon and I’m back. I’ll be joining you with some wintertime favorites that make us all feel warm and cozy.
What about the rain! Can you believe how much we’ve gotten? I didn’t think it could rain that much at one time, but apparently I’ve been wrong – I’m loving it. Monday is a good day to make my Grain-Free Breakfast Bars, so you can grab-and-go your way through the week in the morning. Tuesday night I’m going with my Pepper Jack and Kimchi Quesadillas with Chipotle Yogurt — crispy, cheesy and slightly spicy – with a Mexican-Korean twist. On Hump Day it’s my Caramelized Peppers and Onions Macaroni and Cheese because we will all need a food hug about then. Thursday evening is a great time to prepare my easy, yet tasty Sheet Pan Cajun Pork Tenderloin with Potato Wedges and Crispy Chickpeas. On Friday let’s make a simple supper of Instant Pot Chicken with Bulgogi Sauce. In this dish it’s all about the sauce and it’s made with sesame seeds, garlic, soy sauce and chili sauce – pantry items you may already possess. Saturday’s are for baking and these Whole-Grain Honey Date Cookies are delicious and still sort of on the healthy side of things. Enjoy!
