It’s been a busy week as I’m sure it was for many of you. We are fast approaching Thanksgiving and whether you are having a gathering at your house, or attending somewhere else, some kind of preparation is taking place. Casseroles are usually the best thing to bring if you are schlepping food from one place to another, however if your hosts have room in the kitchen, maybe prepare something on the stove top to prevent using oven space. I recommend throwing together a good side dish of winter vegetables, like one of my Brussels sprout recipes. However, if there’s no room in the kitchen, but counter space, use an instant pot or electric pressure cooker and prepare these Instant Pot Scalloped Sweet Potatoes.
Even though you have Thanksgiving on the brain — you still need to eat, so let’s talk mealtime this week starting on Monday with my Slow Cooker Chicken Filling that you can wrap or roll up with your favorite tortillas or top over winter greens. Tuesday is a great day to continue that easy cooking vibe with my Black Bean Soup recipe that’s super scrumptious and simple to put together. Hump Day is a good time for pizza, especially the day before Thanksgiving when you may already have visitors, and my Deep Dish Skillet Pizza with Arugula and Pepperoni is fabulous and can feed several hungry people. You can always buy the dough and pesto for an easy short-cut on time. Thursday is Turkey Day and if turkey isn’t your thing, these Baby Back Ribs with Braised Fennel and Tangy Sauce will surely hit the spot. Friday is all about using up those Thanksgiving leftovers, and these Potato Pancakes are easy to prepare with cold mashed potatoes.
