It’s getting hot, hot, hot, but we still have to eat. Summertime is a good time to grill, smoke or barbecue, but some of you may not have an outdoor cooking source to do so. Slow-cookers, Instant Pots or any electric cooking devices can make life pretty chill in the kitchen and create some tasty meals – so it’s time to break them out and get creative.
I thought Monday would make a great day to enjoy my Slow-Cooker Barbecue Beef either as a sandwich or over greens as a salad. Tuesday I’m always up for tacos and my Slow-Cooker Chicken Tacos will fulfill those Mexican food cravings, and keep me kitchen cool. For Hump Day, I thought a good bowl of my Instant Pot Spicy Tomato Adzuki Beans served with a side salad would be a delightful meal. You can always sub-out for other beans you may have in your pantry. On Thursday, if you haven’t made my Instant Pot Vinegar Chicken and Artichokes you don’t know what you’re missing. It’s simple flavors that highlight both ingredients beautifully. TGIF and I’d say it’s cocktail time – Cherry Gin & Tonics – oh yeah! Saturday’s are for baking, but with it being summer and all — we’re using our electric pressure cooker to bake this delectable Instant Pot Raspberry Cheesecake. Have a great summer week.
