The latter part of the week really got hot in Southern California, but now we’re supposed to be back to normal this upcoming week. Our spring has mostly been a cool one, for here anyway, with spats of summer sprinkled throughout. I’m still enjoying all that spring has to offer, and I’m loving the fresh fruits and vegetables. Pea season during this time has been so wonderful. I don’t usually eat or cook a lot of peas that often, but they are super sweet and flavorful this year and I just couldn’t resist. Have you tasted a sugar snap pea from the farmer’s market lately? Stay tuned for a tasty salad this upcoming week that’s a spin on an old classic Italian dish – I’m head over heels for it.
I thought we’d kick the week off with a simple Skillet Chicken with Lemons, Spinach and Chickpeas that’s made in one pan. The ingredients are easy to come by and it can be made in less than a half hour. On taco Tuesday this week we’re going vegan with my Caramelized Cauliflower and Onion Tacos with Avocado Mash — super tasty – you won’t miss the meat. On hump day – we’re dipping our way through dinner with my Spring Pea and Ricotta Spread. Thursday is a good night to pull out the slow-cooker, so you have some leftovers for the weekend to enjoy, or invite some friends for a casual gathering, and this Slow-Cooker Pork Arrabbiata over Polenta makes a fantastic meal. On Friday, an easy Butter Chicken that’s loaded with Indian flavors and so simple to make in a moment’s notice. Saturday’s are for baking and this weekend I thought that everybody would love a Chocolate Peanut Butter Brownie Tart to enjoy warm or a la mode – maybe both.
