A Week At A Time – Meal Ideas!

February is a very busy month in my household.  It almost feels like Christmastime around here with tons of cakes and desserts because of birthday celebrations, an anniversary, and Valentine’s day creeping up this month.  I don’t mind it because who doesn’t love a celebration?  The food is always festive and fun, and it tends to be things that are rather simple to make because it’s not just for a couple of people, but for a gathering.  Entertaining is one of my strengths and I love to do it.  I really missed it during the first year of Covid, and now I’m selectively bringing it back in small numbers.  My menu this week will focus on things that you can share with friends and family, if you happen to be celebrating something special, or just because you miss hanging out with company, and need a good meal.  These recipes are nothing overly difficult to prepare, just good quality food.

Monday is one of my good friends birthday’s and they are coming over for dinner and happen to love beef.  My Grilled Beef Fillets with Green Peppercorn Sauce is easy to make and taste restaurant quality — perfect for entertaining (I may need to double it though).  By Tuesday, it’s time for a good salad and my Crispy Chicken Salad with Cool Ranch Dressing is not only delicious, but hardy enough to be a dinnertime meal.  It’s time to spice things up by hump day, and Wednesday we’re having Lamb and Sweet Potato Vindaloo.  If you haven’t tried this recipe, it’s a must for curry lovers.  What are you eating while watching the Olympics?  This Whipped Eggplant and Roasted Jalapeno Dip is perfect to share for a viewing party or family game night.  Friday is wing night and my Guiltless Hot Wings are a fan favorite, especially by my sister and brother-in-law.  They make them almost once a week!  Saturday’s are for baking and we’re not skimping this week for sure.  Salted Chocolate Butter Cake is on the menu and boy is this one good.  It’s a one pan wonder and it’s rich and buttery.  Have another great week and don’t forget to watch Team USA, or whichever team you’re rooting for at the Olympics.

Monday – These beef filets are delightful and sort of look fancy.  If you’re on a tighter budget, substitute another cut of beef and adjust your cooking time accordingly.

Tuesday – I love this easy crispy chicken salad made with ranch dressing.  I crispy up the chicken on the stove top with just a bit of oil, so it’s not overly greasy or heavy.

Wednesday – Some like it hot, like me, and this recipe for lamb curry is outstanding.  I love the added bonus of all the vegetables, it’s a two-fer for sure.

Thursday – I love the consistency of this dip.  The eggplant whips up into a magical experience and the jalapenos just add more fun to it.

Friday – Who doesn’t enjoy a good wing?  These are an old recipe, but one of my very favorites.  No guilt, just great chicken loaded with spicy flavor.

Saturday – It’s my husband’s birthday and this cake recipe might be his favorite.  Enjoy!
