Happy Sunday to all and Wow, that week went fast. I hope most of you are enjoying a little more freedom and being safe all at the same time. Vaccinations are exceeding expectations and that’s a good thing. The sooner we all get our shot the sooner we can get life back to normal, and do the things that we love like theatre, concerts and indoor dining. Yes! I can hardly wait to actually sit inside a good restaurant and hear the hustle and bustle of the other patrons enjoying themselves. In the meantime, we still need to prepare good food for our families on most days, and that makes me excited about this week’s meal ideas. We’re soon heading into hotter weather, and with that, eating changes just a bit, but we haven’t quite gotten there just yet, but the anticipation is killing me.
Some of my favorite recipes are in this week’s meals. For starters, I just love these salmon quinoa burgers, they’re light yet satisfying and not too difficult to make. Turkey Meatballs are on the list too, but not with a standard marinara, but tossed in a sauce that’s a bit more seasonal. I did bring out the Instant Pot for hump day and I think you’ll be pleased with this greens and beans recipe, if you happened to have missed it in the past. I have a couple of semi-spicy recipes on the list, one with shrimp and one for breakfast – both are super tasty. But don’t forget about my creamy chicken & broccoli stuffed peppers because they’re excellent on a Friday for a fast casual meal. Have a great week and happy eating!
