A Week At A Time – Meal Ideas!

Happy Sunday everybody and I hope you’re enjoying your weekend.  Things have been a bit hectic for me lately with trying to finish the inside of our Santa Ynez house and working with a landscaper outside to start that whole project.  Dirt, dirt and more dirt has been cut away from our back hillside to tuck a rustic potting shed back there. I never knew that this could take so many days, and I’m so ready to be done and enjoy the yard, but that’s probably a good month away.  My eye has a blocked duct and I had to make a visit to my Ophthalmologist, so now I’m taking antibiotics because he said it looks infected….great.

But with all this going on, that’s not stopping me from cooking up some terrific food this week.  I’m starting off the week with some delightful BLT’s.  They’re almost no-cook, except for frying up some bacon, and it’s a great way to enjoy summer tomatoes.  Tuesday we’re craving tacos, so Instant Pot Carnitas are easy to throw together in a pinch.  On Wednesday we’re heading to Italy to enjoy a classic Eggplant Parmesan, but my version is baked, not fried.  I think you’re gonna love it.  Thursday I’m serving up a simple chicken dish that has fresh arugula and balsamic vinegar and Friday it’s pasta night and we’re making Carbonara.  The weekend’s are always a nice time to bake and my Pineapple Upside Down Muffins are delicious.  Don’t forget to check out my Leftovers section of my blog, just in case you need to get some ideas about how to utilize those carnitas.  I hope you all have a great week ahead enjoying summer.

Monday –  It’s summer and the tomatoes are outstanding right now.  A few sliced and served on toasted bread with crispy bacon is a meal in itself.

Tuesday – It’s instant pot night (or slow-cooker if you don’t mind the time), and carnitas are what’s inside.  The full steam chamber turns a pork shoulder into a soft shreddable meat to stuff inside tortillas.

Wednesday – It’s Italian night and we’re cooking up one of my all time favorite dishes, eggplant parm.  Mine’s a baked version, instead of frying, and I think you’ll love the results.

Thursday – This chicken dish is so simple and pleases everyone in my household.  I enjoy the contrasting flavors of the bitter arugula with the tangy balsamic and crispy chicken.

Friday – It’s pasta night and not just any pasta night, carbonara night!  This quick cooking dish is made with a handful of ingredients, and you can substitute broccoli, green beans or zucchini for the asparagus if you need to do so.

Saturday –  Pineapple Upside Down Muffins are a very inviting way to start the day.  You can use fresh pineapple (because it’s in season) or canned, it doesn’t really matter.  Great with an iced coconut latte or freshly brewed cup of coffee.
