Happy Sunday everybody. My week flew by because it was filled with buttercream and cake, not something you’d expect during the heat of the summer. However, my granddaughter is turning one, and I’ve been practicing my ombre’ pink colored cakes for her birthday party. This ombre’ technique was not a thing back when I went to pastry school. They just didn’t teach that sort of cake-styling, but today and especially on Pinterest, it’s quite popular. What did we do without Pinterest?! I think I got it now though, after baking two cakes and piping varied colors of pink buttercream, up and down the sides, and then whirling it around with a bench scraper until smooth. Well, good enough in my book.
After practicing all week, I baked the actual party cakes yesterday, and I will begin my full-throttle frosting and decorating on Wednesday, to be completed just before the party next weekend. That’s a lot of cake. So, this week’s meals are going to be simple recipes that I can throw together quickly, without skimping on summer’s best flavors. One-pot meals and utilizing my instant pot is in order for sure. I also want to enjoy another tasty summer salad, so there’s definitely one in the mix. Wednesday – This one is an oldy, but a goodie. Just look at the fresh mozzarella melt over the chicken with a summer fresh tomato on top, and a dusting of fresh basil. It’s totally delish.

Thursday – I had to throw in a little fun this week and this African stew that is so tasty, and truly irresistible. The porky-peanut flavors melt together beautifully in a high-pressure chamber, and dinner’s done in minutes.

Friday – This warm shrimp salad has some of the best texture on the planet. Crispy shrimp are served with creamy avocado and fresh greens, nothing better on a summer evening.
