Look no rain this week here in Southern California and things are really starting to blossom. I love spring and all that it brings to life. There’s a freshness in the air that is so spectacular and it’s a great time to enjoy the outdoors. A good walk or hike is a nice way to celebrate the season, as well as creating meals that reflect the bountiful produce that’s upon us.
On Monday, Pancetta and Asparagus Carbonara is a simple meal that has a hint of spring. This quick and creamy dish is just what the doctor ordered on the first day of a new week. Tuesday is usually taco night, but I’m feeling a delicious Mexican Steak Salad for Two is right up your alley, and it’s an easy dinner in minutes. Wednesday evening is a delicious quick fix meal — Instant Pot Vinegar Chicken and Artichokes. The vinegar adds tremendous flavor, but it also acts as a tenderizer when cooked in an Instant Pot, which keeps the chicken super moist. As we head into Thursday, it’s a big pot of Chunky Potato Leek Soup, which will hit the spot, whether it’s chilly or not. TGIF and it’s cocktail time – Raspberry Moscow Mules. Cool, fruity and refreshing — this drink served at sunset with a tasty appetizer is a the perfect ending to the week. Saturday’s are for baking these Soft Lemon Sugar Cookies – a great treat for little ones or with tea in the afternoon. Have a tasty week ahead.
