A Week At A Time – Meal Ideas!

Happy 4th of July!  I hope most of you are celebrating today with some amazing food.  I can almost smell the smoke in the air with some of my favorite fare on deck; like crazy good burgers, ribs, chicken or sausages cued up and ready for the grate.  This weekend is about our independence and how grateful we feel about our freedom in the country.  Nothing to shake a stick at, or believe that it can’t be taken away in an instant if we don’t stand together for All people.  I find myself looking inward and appreciating what I have, and the people around me much more this year, as well as who and what I want to spend my time with these days.  I wish everyone a happy and healthy holiday and ask that you take a moment today to cherish all our countries gifts.

The recipes this week are going to focus on outdoor food, mostly casual meals and things we can enjoy together.  I happen to love cooking outdoors just as much as inside my kitchen, so I thought I would share some of my favorite meals.  Monday we’re grilling lettuce, yes you heard that right, and boy does it add a light smoky flavor to a salad that I think you’ll just adore.  Tuesday is all about shrimp and pineapple all wrapped up into one.  Wednesday is pork night and we’re grilling up a tasty pork tenderloin that’s super simple, yet flavorful indeed.  I think the cilantro chutney beautifully highlights the pork’s flavors.  Thursday is all about eggplant and if you haven’t grilled one before, tonight is the time.  I think you’ll fall in love with it’s creaminess and meatiness without it being actual meat.  Friday night is full of beans and we’re making ranchero beans, just like the old west.  The weekends are always a nice time to bake, even in the summertime, and these blueberry sweet corn muffins make a great treat any time of the day.

Monday – It’s salad night with grilled gem lettuces in an herby creamy dressing that can stand up to bacon.  This bowl is definitely a meal.

Tuesday – These simple shrimp and pineapple wraps are super easy with flavors of summer.  You can make them outdoors on the grill or indoors in a grill pan.

Wednesday – I love a good pork tenderloin because they cook up so quickly and pair nicely with my zesty cilantro chutney.  You’ll be amazed at how easy this meal is to prepare in no time at all.

Thursday – I don’t just like this salad, but I love it!  The eggplant gets super creamy with charred edges when grilled and tastes so divine with fresh tomatoes and greens.

Friday –  Love me a pot of beans.  These aren’t just any beans, these are ranchero beans and taste like the good outdoors.

Saturday – It’s always a good morning with freshly baked muffins.  These are blueberry muffins, but made with cornmeal and flour.  The combination is sweet and slightly savory.  They’re terrific with coffee, but are nice with a meal during the day too.
