Grilled Gem Lettuce Salad with Green Goddess & Bacon – Recipe!!

Grilling lettuce changes the salad game completely.  The naturally crisp greens wilt slightly and have a smoky essence with just a quick sear on the grill.  Romaine Lettuce is the usual culprit when it comes to grilling lettuce, but I thought why not use a more delicate version of lettuce, like GemGem Lettuce has a more fragile leaf, while still being able to hold up to the heat of  a barbecue.

Green Goddess Dressing is a quick mix of ingredients, mostly from your refrigerator, including fresh herbs.  It really doesn’t matter which combination of herbs you choose to blend up in this creamy dressing, just that they are softer herbs; like parsley, cilantro, chives or basil.  Leave the rosemary and hardier herbs for cooking.

Crispy bacon is the icing on the cake in this salad recipe.  It gives it the right salty balance and mad texture with every forkful.  This recipe is a meal in itself, but it does pair nicely with a grilled steak or pork chop.

Ingredients

Green Goddess

1 anchovy filet

1 clove garlic, peeled and cut in half

juice of 1 lemon

1/2 cup of fresh herbs – any combo of parsley, cilantro, chives or basil

1/4 cup sour cream

1/4 cup mayonnaise

pinch of salt & pepper

Salad

2 heads Gem, Bibb or Butter lettuce

4 slices cooked bacon

oil for grilling

(Serves 4)

To Prepare:

  1. Heat grill to 400 degrees.  In a food processor, add anchovy, garlic and lemon, pulse until chopped.  Add herbs and pulse again until coarse crumbs.  Add sour cream, mayonnaise, salt and pepper, puree until creamy.  Place in bowl and set aside.
  2. Wash and slice lettuce in half.  Drizzle with oil and place cut side down on grill.  Grill for 2 minutes, just until light grill marks.  Remove and place in salad bowl.
  3. Spoon dressing over top and sprinkle with crispy bacon.  Enjoy!
