Happy Sunday funday! I hope you’re all enjoying your weekend. It’s been cold here in Southern California, which is relative compared to other parts of the country. We aren’t shoveling snow or scraping ice off our windows quite yet, but we are breaking out our down jackets and gloves during the morning and evening hours to keep warm. What really will keep everyone warm is some homemade soup, stew or other heart-warming recipes this week.
On Monday it’s Tomato Soup night. A big bowl of tomato soup always seems to warm us up and a good grilled cheese alongside might make it even better. Tuesday night is usually all about tacos, but my Pork and Pinto Bean Stew is a simmering pot of deliciousness to keep us toasty through the night. Wednesday is Sheet Pan Kielbasa, Kabocha Squash and Potato Dinner because it’s so darn easy and tasty too. I like to make a dijonaise for dipping, which is a combo of mayonnaise and Dijon mustard, stirred until creamy smooth. Thursday is Chicken and Spinach Skillet Pot Pie night — a dish that will really bring in the comfort. I like to serve it straight out of the pan on the table, so it’s easy to grab seconds. Friday night we’re making chips — Smoky Baked Sweet Potato Chips, which go great with burgers or sliders. Saturday’s are for baking — a day I truly love, especially when we’re making my Whole Grain Olive Oil Chocolate Chip Cake. It’s pure joy and a bit healthier. Have a tasty week and keep warm.
