I hope you had a wonderful Thanksgiving and are still enjoying your family and friends. If you haven’t quite used up those leftovers, it’s time to get creative. Maybe make a quick turkey burrito or taco and savor the last of them for lunch? This week I kick off Christmas and holiday food that we so enjoy this time of the year.
On Monday, I’m making Apple Cinnamon Baked Oatmeal – a dish you can prepare during the week, and around the holidays to serve on mornings with guests. Tuesday night means tacos, yet I’m in a soup kind of mood, and my Albondigas Soup is so savory delicious that I think it makes a great substitute, and it’s also divine to serve on Christmas Eve. On Wednesday it’s my Sundried Tomato Pesto Penne with Shrimp and Sausage – a delicious dish that’s easy for during the week, and makes a pretty tasty meal when time is tight. Thursday evening is the perfect time for Salmon Picata – it’s light and lemony with a salty kick from the capers. It also makes a fantastic dinner party dish because it’s so easy to throw together, yet tastes restaurant quality. TGIF and you probably need a good cocktail idea – perhaps a Chocolate Peppermint Martini to share with friends?? It’s cool and smooth with just the right minty-chocolate balance. Saturday’s are for baking and I think a cookie swap is probably on the horizon. These Chocolate Peanut Butter Christmas Bites will surely be a hit to share.
