Christmas is soon here and it wouldn’t taste like the holidays without cookies. Christmas Cookies can be quite daunting to make if you don’t have a lot of patience or time. However, there are some easy ways to make delicious treats without spending hours in the kitchen. These cookies use only one-bowl and can be made in minutes.
Everyone I know loves the combination of peanut butter & chocolate and Reese’s has done most of the work for you. Reese’s Bells are one of my favorite inexpensive chocolate treats and make the perfect topper on a warm chocolate mini cake. I love the idea of not having to frost cakes or cookies, and the Reese’s Bells, after melting, act as the icing.
These little desserts are perfect to serve at parties, or exchange at a cookie swap. I recommend you keep them in an airtight container in the refrigerator and pull them out an hour or so before serving. When you bite into one, the soft chocolaty peanut butter center just melts in your mouth and the surrounding cake adds to the celebration. Happy Holidays!
Ingredients
2 eggs
1 cup sugar
2 teaspoons vanilla extract
1/2 cup cocoa powder
1/3 cup all purpose flour
1 teaspoons baking powder
1/2 teaspoon salt
1 stick butter, melted
(Makes 48 Mini Bites)
To Prepare:
1. Preheat oven to 350 degrees. In a large bowl, mix together eggs, sugar and vanilla, until combined. Sift in cocoa powder, flour, baking powder and salt, stir. Add melted butter and stir until smooth.
2. Scoop batter into each mini muffin cup filling 2/3 full. Bake in oven for 12 minutes. While bites are baking, remove wrappers from each bell.
3. Remove bites from oven and place a bell on top of each mini cake. Let cool to room temperature. Store in an airtight container in refrigerator until ready to serve. Enjoy!
