Happy Sunday and I hope you are enjoying another beautiful summer weekend. As most kids are back at school, it still feels like summer is in the air. I’m enjoying some baking and getting ready to launch into fall. However, I don’t want to jump too soon because there is so much gorgeous summer produce to enjoy while it lasts. Peaches, plums and bright colored berries are still on my mind, while apple season is on the horizon.
On Monday, I thought a simple dish like this Grilled Marinated Asian Chicken with Crunchy Slaw might be nice on a warm summer evening. Tuesday is a good night for tacos of course, but my 7-Layer Board Dip has similar flavors and there’s no cooking involved. Wednesday night is a good evening to whip out the Instant Pot and make Chicken Sugo with Whipped Ricotta. You might want to substitute fresh tomatoes for canned because it’s still tomato season. Thursday night is barbecue night, not that kind of barbecue, but Slow-Cooker Barbecue Beef Sandwiches. They have all the flavors of outdoor cueing, yet are much simpler to make. On Friday night, it’s time for Fried Green Tomato Lemon Ricotta Toasts – because they go great with a glass of wine to chill-out after a long week. Saturday’s are for baking and I love this Mixed Berry Crumb Slab Pie — make it while the berries are still at their peak. Have a tasty week ahead.
