It’s been a super busy week and I’m sure glad it’s Sunday. The weather has been amazing here in Southern California and I’m heading to my granddaughter’s 3rd birthday party with cake. Yes, I always bake my grandkids their own birthday cake and this year it’s going to be extra special with a pink dinosaur theme. My car will be subzero temperatures as I drive south, so the buttercream isn’t in a puddle before arriving — I’m sure it won’t.
This week’s meals are some of summer’s best starting with Monday and my Creamy Summer Gazpacho. The fruits, and rustic bread are completely pureed together, that’s what makes it super creamy. Tuesday night is taco time, and my Summer Tomato Salsa is the perfect topping on any taco recipe. Wednesday is a good evening for Sweet Corn, Ricotta, and Cherry Tomato Puff Pastry Tart. It’s super simple to put together and it’s so much better than delivered pizza. On Thursday, it’s Grilled Thai Peanut Plank Salmon — so zesty and full of Asian inspired flavors. Friday night is cocktail hour and this Blueberry Paloma will make you smile. Saturday’s are for baking and this weekend it’s Lemon Ricotta Zucchini Bread. This recipe is super moist and tender, and the lemon highlights the zucchini is such a fantastic way. Have a tasty week.
