If there’s one thing I love in the summertime – it’s stone fruit and these Super Easy Nectarine Toasts are such a delightful way to take advantage of nectarine season.
Breakfast or brunchtime on the weekends or during the week when time is a bit tighter — these toasts are the perfect solution. Slicing up a couple of nectarines is a breeze and placing them on top of rustic bread that has been toasted, and smeared with cream cheese is the first easy step. A squeeze of lemon across the top of the freshly sliced nectarines add acidity and preserves their freshness. The final touch is a chiffonade of basil for herbal notes that impress the senses and creates a toast that’s summertime special.
I like to serve them anytime of the day, even as a snack or for lunch. They also would make a great appetizer, if sliced in half and served with cocktails on a warm summer night. Enjoy!
Ingredients
2 large ripe nectarines, sliced thin
4 slices rustic bread
4 ounces cream cheese or dairy-free alternative
1/2 lemon
8 basil leaves, chiffonade
(Serves 4)
To Prepare:
- Toast bread slices in toaster or under broiler.
- Spread with cream cheese and top with nectarines, overlapping slightly.
- Squeeze lemon over top and sprinkle with fresh basil. Enjoy!
