Happy Sunday. Has the May-gray/June-gloom gotten many of you in Southern California yet? Well, I’m ready for a heat wave like the east coast is experiencing, so we can feel like we’ve risen above those rainy months. Shorts, remember those things we wore almost weekly during most years — I’m ready for those as well as foods that taste of summertime.
I’m just going to pretend it’s going to be blistering and if you’re in a place that is, Monday’s Smoky Pesto Pasta Salad will taste super refreshing. Tuesday night is taco night, yet I’m throwing in a twist and enjoying these Grilled Chicken Tostadas. The flavors are similar to a taco, but they’re different on so many levels — give them a try and see for yourself. On Hump Day we’re breaking out the electric pressure cooker to make this tomatoey Lamb with Spinach. It’s a super easy meal and springtime is lamb season, so take advantage. Thursday means the weekend is nearing, and you’re probably ready for a good pasta dish — Caramelized Chicken and Green Garlic Pasta. Green garlic is available at most farmer’s markets and some grocers, or you can substitute regular garlic, but it’s a bit stronger — so use just a tad less and maybe throw in a minced scallion for freshness. TGIF and it’s cocktail time — Raspberry Moscow Mules. Cool and fruity, these drinks will make you feel like it’s almost summer. Saturday’s are for baking, and my Nutty Twix Cookies are ready to pack up and go on a picnic or outdoor adventure. Have a great week.
