Happy Sunday! I hope you are enjoying this gorgeous weather and either finishing up a ski-week or anticipating spring break. This time of the year is usually a tweener for cooking because winter is coming to an end, but it’s not quite springtime with flowers blooming and abundant vegetables.
I usually like to focus on the freshest ingredients I can find for the season I’m in so, I’ll stick to wintertime vegetables for the most part with touches of fresh herbs. On Monday, let’s begin the week with Spiced Pork with Sauteed Cabbage and Apples — an older recipe that’s been on my blog, and one that’s loaded with sweet and savory flavors. Tuesday night is all about tacos, as usual, and these Rajas Tacos are some of my favorites because the slightly spicy charred poblanos and corn make them so tasty. Poblanos or pasilla chilies can be used as well as frozen corn that’s been defrosted. On Wednesday it’s Braised Chicken Thighs with Mushrooms and Lentils — a one skillet wonder that’s packed with deliciousness. Thursday is all about noodles and my Creamy Chicken and Broccoli Pasta is another one pan meal that’s loaded with cozy flavors. Friday night I think it’s a good time for finger food and my Roasted Squash, Goat Cheese and Spinach Quesadilla is a great way to end a busy week. Saturday’s are for baking and these Nutty Praline Brownies are so fudgy and nutty that you’ll be wow’d by the yumminess of them. Have a good week!
