Superfoods are those things that make your body get-up and go like; broccoli, brussels sprouts and leafy greens. These foods are a great choice for a healthy diet and make you feel as though you can do anything with your day. I try and make these nutritious choices on most days because eating a green diet mixed with some protein just makes me feel good.
When I was in Nashville, TN a few weeks back, I had a delightful salad at a cafe called, Milk & Honey in the Gulch. It was loaded with these exact things and I remember how great I felt after lunch. The raw salad ingredients mixed with fresh berries and dried fruits, had great crunch and a super satisfying taste – I loved it.
So, here’s my version of a superb Superfood Salad – one quick hint…use your food processor to slice the brussels sprouts and broccoli, and then toss with leafy spinach. Also, the vinaigrette is a snap and perks up the mix of greens with a sweet and tangy balance. You can always add some shredded chicken or tuna to the mix for a bump of protein – it’s going to be a nice thing to eat during the hot week ahead.
Ingredients
1/2 crown broccoli, cut into pieces
1 cup small brussels sprouts, ends removed
4 cups baby spinach leaves
1 cup fresh blueberries
1/3 cup red onion, minced
1/2 cup dried cranberries or cherries
2/3 cup walnuts, roughly chopped
Vinaigrette
1/8 cup red wine vinegar
2 tablespoons lemon juice
1 tablespoon honey
1/2 cup olive oil
pinch of salt & pepper
(Serves 4-6)
To Prepare:
1. In a food processor with a slice blade attached, add broccoli and brussels sprouts in batches through the feed tube. Place sliced vegetables in a bowl.
2. Add spinach leaves, red onion, blueberries, cranberries and walnuts, toss.
3. In a small jar with fitted lid, add all vinaigrette ingredients – shake like mad.
4. Serve salad with vinaigrette or store for later. Enjoy!
