Instant Pot Thai Peanut Country Pork Ribs and Broccoli – Recipe!

Using an electric pressure cooker to braise boneless pork ribs makes life way too deliciously easy and when you take just one bite of these Instant Pot Thai Peanut Country Pork Ribs and Broccoli, you will jump to have that table set in no time.

Making a Thai peanut sauce is as simple as adding pantry ingredients in stages to the pot to create one delectable sauce — and it’s all about the sauce in this recipe.  The boneless pork ribs are a delightful vehicle to get more of those Thai flavors in one fantastic bite.  I chose boneless pork country ribs for a couple of reasons.  For starters, they absorb the sauce easily and become fork tender in about 40 minutes in a pressure cooker, and they are also inexpensive, and can feed a family, or group of friends for a few bucks a person.

Freshly grated ginger, a jalapeno or Thai chili for heat, and some soy sauce, fish sauce and chili sauce – things you should definitely have at your fingertips in the kitchen, will make this sauce pop with umami goodness.  I used chunky peanut butter, so there would be no need to add chopped peanuts to the dish.  The entire meal is made in less than an hour and most of it is inactive cooking time.  My kind of dinner this time of the year.

Ingredients

1 white onion, diced

1/2 jalapeno or Thai chili, sliced

1/3 cup soy sauce or tamari

1 tablespoon fish sauce

1 tablespoon sesame oil

2/3 cup chunky peanut butter

1/2 cup warm water

2 tablespoon sweet chili sauce

2 tablespoon brown sugar

1 1/4 pounds boneless country pork ribs

1 1/2 cup broccoli florets

chopped fresh cilantro for garnish

salt and pepper

oil for cooking

Hot rice for serving, optional

To Prepare:

  1. In a electric pressure cooker, add 2 teaspoon oil and onion.  Stir and sauté for 3 minutes.  Add jalapeno or Thai chili and stir.  Add 1/2 teaspoon salt and 1/4 teaspoon black pepper, stir.
  2. Add soy sauce, fish sauce, sesame oil and peanut butter, stir until almost combined.  Add water, chili sauce and brown sugar, stir.
  3. Add pork ribs on top and place lid on top.  Cook on high for 40 minutes.  Release steam immediately and add broccoli.  Place lid back on pot and allow broccoli to steam for 5 minutes.
  4. Spoon rice into bowls (if using) and ladle a rib with sauce and broccoli over top.  Enjoy!
