Instant Pot Homemade Hamburger Helper – Recipe!

Remember when Hamburger Helper was a thing?  Okay, maybe I am dating myself, but it truly was a product that at least someone in your family made at least once, but I’m guessing more than that.  The idea of Hamburger Helper was genius, a box of ingredients you added to hamburger to create a quick stove top meal.  Isn’t that what most of you are looking for during the week to feed your families?  Well, we can do better than that and make our version using a pound of ground beef with fresher ingredients, in less than 15 minutes.  What do you say?

Ground meat is the sort of thing that every freezer must contain.  It’s a quick go-to at dinnertime and it cooks up fast and usually pleases most palates.  If you are not a red-meat eater, you can use turkey or ground chicken, but try and buy the darker meat versions, so it’s not too dry.

The rest is pretty simple, add mushrooms and onions (oh, I added mushrooms) and dried spices to pot, saute’ for a few minutes, then add beef and cook until lightly browned.  Add tomatoes, dried pasta and a splash of wine (oh, we have wine in this) and press cook for 3 minutes.  Let cooker naturally release and serve.  Done!

Ingredients

8 ounces mushrooms – crimini, baby bellas or button, sliced

1 small white onion, diced

1 clove garlic, minced

1 teaspoon dried oregano

1 pound ground beef

14 ounces diced tomatoes with juice

2 tablespoons tomato paste

2 cups dried pasta, I used brown rice penne

1/2 cup white wine or water

2 inch Parmesan cheese rind or 1/3 cup Parmesan cheese

salt & pepper

olive oil

(Serves 4-6)

To Prepare:

  1. Press Saute on Instant Pot and add 2 teaspoons olive oil.  Add mushrooms, onions and garlic, saute for 3 minutes.  Add oregano, beef, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper, stir to combine.  Cook until beef is mostly browned, about 4 minutes.
  2. Add tomatoes and tomato paste, stir.  Add pasta, wine and Parmesan, stir to combine.  Hit Cancel and place lid on top, Seal.  Cook for 3 minutes on High Pressure.  Let naturally release and remove lid.  Stir and spoon into bowls.  Enjoy!
