Leftovers are a thing I’m pretty good at transforming into a brand new recipe. In fact, I don’t really eat leftovers the same way as I made them the first time, especially when the possibilities are endless on another new and delicious meal. Thanksgiving leftovers like turkey, dressing and cranberry sauce can be easily loaded onto a sandwich, but why stop there.
When thinking about leftovers, there are so many ways to swap out ground turkey or other ground meat, for diced, or shredded turkey meat that has already been cooked. Things like lasagna or pasta dishes are a great place to use up those leftovers. The same goes with dressing or stuffing. It can be substituted for cubed bread in savory bread puddings, muffin cup meals, or breakfast casseroles. As far as potatoes, potato casseroles, and roasted vegetables, they can be tossed into a breakfast hash, frittatas, or pureed with some onions for a smooth and creamy soup. Here’s list of some Thanksgiving leftover ideas to enjoy with all that good stuff you have left in the refrigerator after your big meal on Thursday. Remember you can get pretty creative and substitute as many turkey day treasures to make another amazing meal. Happy Thanksgiving!
