I grew up eating Rice Krispies Treats and have such good memories of places where I enjoyed them. Whether it was at school sitting on the lunch bench with my girlfriends or on a picnic or camping trip, those crispy treats where somewhere in the picture. The reason they’re so popular is that they are easy to make, fun to eat and taste so good. You can fold almost anything into the hot marshmallow mixture and create a dessert that really makes people happy. This time around I went with Peanut Butter & Chocolate because who doesn’t love that combination?
This recipe is super easy and I’m sure most of us have made Rice Krispies Treats at least a few thousand times before. Basically you fold peanut butter into the marshmallow-butter combination on the stove top and add the cereal. Then, the chocolate portion of the program begins with melting semi-sweet chocolate and white chocolate separately, and layering it on top of the treats and then swirling it together. That’s it – deliciousness made easy.
Ingredients
5 tablespoons butter
10 ounces large marshmallows
pinch of salt
3/4 cup creamy peanut butter
2/3 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
(Makes 12 Squares)
To Prepare:
- Spray or grease a 9 x 9 inch baking pan, set aside. In a large saucepan or Dutch oven, add butter and place over medium heat. After butter is mostly melted, add marshmallows and salt. Stir to combine and use lid to cover pot for a few minutes at a time – allowing marshmallows to melt easier. Stir until smooth and add peanut butter. Stir to combine and then, add Rice Krispies cereal, stir.
- Spoon hot cereal mixture into pan and press to smooth out on top (be careful, it’s hot). In a glass measuring cup add semi-sweet chocolate and place in microwave for 1 minute. Remove and stir. Place back in microwave for 30 seconds. Remove and stir until smooth. Spoon over rice treats until completely covered. Place treats in freezer for 8 minutes.
- Place white chocolate chips in glass measuring cup and microwave for 1 minute. Remove and stir. Microwave for 20 seconds, remove and stir until smooth (be careful not to over microwave chocolate).
- Remove treats from freezer and spoon white chocolate in thick lines on top of semi-sweet chocolate. Using a fork, run tines across grain, swirling two chocolates together. Place in refrigerator to set up completely before slicing. Enjoy!
