You can make sliders in many varieties including; turkey, chicken, pork and vegetarian, but somehow basic ground beef seems to be the favorite. Beef has such juicy succulent flavor and goes hand-in-hand with a slice of good cheddar cheese, especially when melted over the top. Caramelized onions are a nice addition as well, and usually top my burger, even when I go to In-N-Out on occasion. There is something decadently sweet and fulfilling about the entire experience.
Cooking sliders can be done outside on the grill or in an iron skillet, as I did in this recipe. I think the outside crust on the beefy patties is a bit nicer from cooking them in a skillet, but it is summer and hot, so it’s up to you. Just remember the cooking time is rather quick because the size of the burgers, so the kitchen doesn’t heat up too badly.
These Beef & Cheddar Sliders with Caramelized Onions have all the comforting flavors of our favorite burgers and with homemade taste. I love the size of a slider, because they are super meaty, and packed with all the goodness of a full sized burger. These sliders are great with potato salad or a side of coleslaw and they make pretty fun party food.
Ingredients
1 white onion, sliced
1 pound 80/20 ground beef, grass fed preferably
1 teaspoon smoked paprika
1 teaspoon onion powder
2 teaspoon salt + more to sprinkle on top
1/2 teaspoon black pepper + more to sprinkle on top
3 slices cheddar cheese, cut in half
6 mini Brioche buns, or other variety
mayonnaise
olive oil
(Makes 6 Sliders)
To Prepare:
1. In a saute pan, add 1 tablespoon olive oil and the sliced onions. Cook over medium-low heat for 15 minutes, stirring occasionally. Remove from the pan when golden brown, and spoon into a bowl, set aside.
2. In a large bowl, combine the beef, paprika, onion powder, salt and pepper. Using your hand, gently knead the spices into the beef and form into 6 patties. Sprinkle the tops of the patties with a little more salt and pepper.
3. In an large skillet, add 2 teaspoons of olive oil and place over medium-high heat. When lightly smoking, add the beef patties and cook for 4 minutes. Flip over and place 1/2 slice of cheese on each patty and cook another 3 minutes, or until the cheese is almost completely melted.
4. Slice the buns in half and spread with a little mayonnaise. Place a beef & cheddar patty on each bun. Top with caramelized onions and serve. Enjoy!
