Avocado & Sweet Radish Toasts – Recipe!

Avocado toasts have been the hip food for years and I don’t think they are losing any popularity.  It could be because avocados are so rich and creamy delicious, or the fact that the healthcare industry keeps telling us how good they are for us.  It doesn’t matter the reason – avocado toasts are here to stay.

Avocado toasts are a great breakfast item, but are also the perfect lunchtime treat, or great for quick snacking later in the day.  They truly keep us more satisfied than chips or a granola bar, because of all the healthy fat from the avocado, not to mention are much better for us.

I thought it would be fun to add a sweet sliced radish on top of each toast for a bit of contrast, adding a spring crunch.  Topping bread or toast with radishes is definitely a French thing.  If you haven’t experienced buttered bread or baguette with a freshly sliced radish and a pinch of salt, you don’t know what you’re missing – I love a good touch of French culture wherever I can get it.

These toasts are super simple to assemble and a little pinch of Aleppo pepper adds a hint of smokiness to each bite.  If you don’t have Aleppo Pepper, you can substitute a small pinch of sweet paprika – but you should try and track some down – it’s uniquely additive.

Ingredients

2-3 pieces whole grain bread

2 small avocados

1/2 lemon

2 radishes, sliced thinly

1 teaspoon Aleppo Pepper

salt

olive oil

To Prepare:

  1. Toast bread until brown and crisp.  Slice avocados in half and remove pulp with a spoon.  Place pulp in a bowl and squeeze with lemon juice.  Mash with fork until creamy.
  2. Spread mashed avocado on toasts and sprinkle with Aleppo pepper and salt.  Top with radishes and sprinkle with more salt.
  3. Drizzle toasts with good olive oil.  Slice in half and serve.  Enjoy!
