Christmastime is here and things are picking up speed pretty quickly with so much yet to get done. I just finished decorating the tree and pulling out most of the holiday décor to spruce up the house for my family that will be visiting for the holidays. We used to be a family that lived close to each other and as the years have passed, everyone is more spread apart than ever. However, that’s not stopping us this year, we’ll all be together very soon. I haven’t started planning my holiday menu quite yet, but I sure have some delicious recipes you can make before the big day comes.
On Monday, I thought we’d start the week off with something green and delicious like Broccoli with Pine Nuts and Dates. It’s easy to throw together and pairs nicely with any type of protein. Tuesday night is usually taco night, but tonight it’s Pepper Jack and Kimchi Quesadillas with Chipotle Yogurt. You can find store-bought kimchi almost any where these days, and it really perks up a basic tortilla with zesty cheese. Wednesday is a great night for Roasted Root Vegetable Soup – so go ahead throw any type of root vegetables (potatoes, onions, carrots, parsnips, turnips, or shallots in a big pot with some stock and simmer away until tender. Thursday is pasta night and it’s a deliciously simple dish of Charred Tomato and Shrimp Orechiette. By Friday, it’s time for a cocktail and here are not one, not two, not three, but 4 Holiday Cocktail recipes. Saturday’s are for baking and I love a good Eggnog Bread Pudding with Caramel Sauce this time of year. Have a great week and enjoy the season.
