Happy Sunday to everybody and don’t forget it’s Oscar Night tonight. I’ve seen all of the movies that have been nominated, except Licorice Pizza, which I will get to sometime next week. I enjoyed all of them is an artistic sort of way, but I think I have two favorites – Power of the Dog and Belfast. If you haven’t had a chance to see at least these two — it’s worth a look, and maybe even a mid-day movie before the big night begins. I just love a good Oscar evening. In fact, my neighbors are coming over for appetizers and champagne tonight and I can’t wait. I love all the pageantry and especially the dresses and outstanding outfits that the actors will be wearing. The Oscar’s have been buckled down the past few years due to Covid, yet tonight should be a full-blown event just like the good ole’ days.
The week ahead starts wet and rainy here in Southern California, and then gets back to normal temps by mid-week. Spring has definitely sprung, so I’d like to keep to that theme for a while. On Monday it’s soup night because it’s raining and cool, and my Green Minestrone makes the most delightful pot of soup on a chilly evening. Tuesday are for tacos, so my crunchy Baja Fish Tacos are the perfect fit. On Hump Day we’re going with Pasta alla Norma or pasta with eggplant in a red sauce. I made it in an Instant Pot for a quick and easy supper. Thursday is a great time for salad and my Crispy Shrimp and Avocado Salad is hardy enough to be the entire meal. It’s cocktail night on Friday because we’ve earned it and my Bourbon Orange Cider will definitely hit the spot. Saturday’s are for baking and this week I thought my Mini Meyer Lemon Cheesecakes would aim to please. Have another great week and enjoy the Oscar’s.
Monday – This vibrant colored soup is just what springtime ordered and it’s loaded with green vegetables and noodles. The entire family will enjoy a big bowl.
Tuesday – I love a good taco, and especially a fish taco. The crunchy outside mixed with the creamy fish make the perfect bite.
Wednesday – It’s pasta night and this dish is super easy, yet warm and comforting. The instant Pot turns the eggplant creamy and delicious, and it most definitely melts into the sauce – giving it great texture and flavor.
Thursday – Crispy, creamy and oh so good. That’s what this big bowl of greens is all about.
Friday – Cheers!
Saturday – It’s a great day for cheesecake and my mini Meyer lemon cheesecakes are spectacularly good.
