A Week At A Time – Meal Ideas!

Good morning and happy daylight savings time.  We get an extra hour of sunshine today, and that’s always a good thing, but we lose an hour of sleep, which calls for another cup of coffee this morning.  I prefer to keep it light longer because I’m not really a morning person and I like to prepare dinner later when it is still light outside, and enjoy our final meal of the day, while watching the sunset.  I know many of you prefer it lighter early in the morning because you are early risers or you have to get up to go to work super early, and don’t want to be in total darkness.  Either way, we get the best of both worlds with changing our clocks twice a year – something for everyone.

Saint Patrick’s Day is this week and out comes the corned beef and cabbage, however there’s so many other dishes you can enjoy besides pickled beef.  Shepard’s Pie will get you in the Irish mood, and I thought Monday would be a great day to enjoy this meal.  Taco Tuesday can’t be missed this week and my Cauliflower and Caramelized Onion Tacos with Avocado Mash are pure deliciousness.  Wednesday I thought we’d go with potatoes (a favorite in Ireland) and make my Potato Leek Soup with Prosciutto crumbles.  Thursday is St. Patrick’s Day and yes, I am making my Apple Juice Braised Corned Beef and Cabbage because it’s the best.  We’re enjoying those leftovers on Friday and easily preparing Corned Beef and Honey Mustard Sliders.  Saturday’s are usually for baking, but I thought we’d make my Irish Coffee Ice Cream instead.  Have a fabulous week and Happy St. Patrick’s Day.

Monday –  Ground beef or lamb mixed with spices make the base of this casserole, but it’s the creamy mashed potatoes that are always a favorite.

Tuesday – These vegetarian tacos don’t skip a beat.  The cauliflower and onions have super umami flavors and the avocado gives the entire taco pure creaminess.

Wednesday – I love a good bowl of soup and this potato leek version is one of my favorites.  Don’t skip the prosciutto crumbles because they add the perfect amount of crunch.

Thursday – It wouldn’t be St. Patrick’s Day without this meal.

Friday – I love a good slider and these are super easy if you use the leftovers from yesterday.
