Happy Memorial Day weekend. I hope most of you are enjoying some family/friend time and possibly the great outdoors either in the park or playing Pickleball. Pickleball has been such a fun sport to learn and it doesn’t matter how old or athletic you are, everyone has a good time.
Monday is actually Memorial Day, and a nice barbecue is always in store to celebrate those who have sacrificed for our freedom. So, kick off the holiday with a couple of Grilled Ribeye Steaks with Flowering Herbs. The marbled steaks balance out with freshly cut herbs from the garden, or the local farmer’s market. Tuesday is back to work and mealtime becomes quick and easy with Instant Pot Spicy Cumin Black Beans. You can enjoy them in a bowl, burrito or puree them into a soup. Wednesday night means you’re halfway through the week and why not enjoy a Crispy Chicken Citrus Salad to celebrate. It has all the texture and flavors of orange chicken, but in a healthier salad form. On Thursday, this Roasted Asparagus and Red Pepper Soup is deliciously easy for a tasty meal. At the end of the week, Rhubarb Chutney with Goat Cheese is delightful with a glass of bubbles or a cocktail, especially on a Friday night. Saturday’s are for baking a Cherry-Apple Almond Crostata for dessert. Have a flavorful week ahead.
