Happy Sunday and I hope all of you are enjoying your weekend. It’s still warm here in Southern California, but good news – it looks like possible rain towards the latter part of the week. I’m a warm weather gal, but I am looking forward to a bit more change of season because cooking, and especially baking feel so much better.
On Monday, it’s an Ethiopian stew made easy in an Instant Pot or electric pressure cooker. The spice blend berbere you can find at many local grocers and definitely online, or you can make your own from scratch by blending chili powder, cinnamon, cayenne and garlic powder. Tuesday is taco night and I’m craving my Slow Cooker Pulled Pork Tacos because they are packed with delicious flavors and the meat is super tender. Top with guacamole and some Chipotle crema that’s super simple to throw together.
Seared Halibut with Ginger Scallion Sauce is what’s for dinner on Wednesday. The fish is cooked quickly in a skillet and the Asian inspired sauce is spooned over top. Thursday evening is Roasted Vegetable Soup because it’s going to chill down for the upcoming storms and a nice big bowl sounds great by a roaring fire.
Friday night after a long week and my Cheesy Double Bean Dip is delightful with a good cocktail or mocktail. You can also fold it up in a tortilla and make burritos. Saturday’s are for baking a Pumpkin Cheesecake with Salted Pretzel Crust. Perfect to share with friends after a wonderful meal. Keep on cooking and enjoy the fall ingredients.
