Happy Sunday and I hope everyone is enjoying their weekend. Summertime is always a favorite season with so many outdoor activities and fantastic foods for cookouts. This week is going to be lovely and I’d like to highlight more easy recipes with a bit of grilling flair.
Monday night’s meal will be a Grilled Avocado and Sweet Corn Salad which includes ingredients from your local farmer’s market. The combination of creamy avocados with sweet corn is a delicious treat and highlights the freshness of the season. If you haven’t tried to grill an avocado tonight’s the night. Tuesday is sandwich night and this Pesto, Peach, Prosciutto and Mozzarella Grilled Cheese Sandwich is not only a tongue twister, but pure delight. The sweet and savory flavors are so good together.
Hump Day comes quickly during a busy week and Slow Cooker Barbecue Beef makes life pretty tasty at the end of the day. Pile it high on a toasty bun or serve it over grits, or mashed potatoes for a delightful meal. Halibut with Citrus Sauce makes Thursday evening spectacular. Fresh halibut gently seared in a pan with a saucy citrus kick and some sauteed spinach makes a fantastic dinner option.
Friday evening is wind-down time and a Patty Pan Gruyere Tart made with store-bought puff pastry is simply delicious with a glass of crisp Chardonnay or Sauvignon Blanc. Saturday’s are for baking Sour Cherry Oatmeal Bars. These easy bar cookies are created with fresh or frozen defrosted fruit. Have a tasty week ahead.
