Skillet Chicken and Spinach Fusilli – Recipe

Try this delicious Skillet Chicken and Spinach Fusilli recipe for a quick and healthy dinner! Packed with flavor, it’s perfect for busy weeknights or a hearty family meal.

Skillet meals are something I adore when you’re exhausted at the end of the day and want something fast, yet warm and cozy to eat.  Using leftover chicken or some of a rotisserie chicken makes perfect sense and becomes a real time saver because the chicken is already cooked.  Another bonus is that the entire recipe is made in one pan, including the pasta, which makes it even more time efficient.

The sauce is an simple mixture made with chicken broth and flour.  You can always substitute cornstarch for flour, if you are gluten intolerant, but you don’t want to skip this step because that’s what makes the sauce so lusciously creamy.  There is no dairy in this recipe — yet it still has a wonderful creamy consistency — I love how the noodles are coated in such a delightful simple sauce.

Ingredients

1 small yellow onion, diced

1 clove garlic, minced

1 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons all-purpose flour or 1 tablespoon cornstarch

3 cups chicken broth

1 1/2 cup cooked chicken, shredded

1 1/2 cups Fusilli pasta or other short noodle pasta

2 cups baby spinach

olive oil for cooking

To Prepare:

  1. In a 12-inch skillet or large Dutch oven, add 2 tablespoons olive oil and place over medium heat.
  2. Add onion and stir.  Cook for 3 minutes, then add garlic, stir.
  3. Add salt, pepper and flour, stir and cook for 2 minutes to remove any raw flavor from flour.
  4. Add chicken broth and stir.  Cook for 2 minutes to slightly thicken broth.  Add chicken and Fusilli, stir.
  5. Reduce heat to medium-low and cover skillet with lid.  Cook for 8 minutes, remove lid and stir.
  6. Add spinach and stir to wilt spinach.  Remove from heat.
  7. Ladle onto plates or bowls.  Enjoy!
