Pesto, Peach, Prosciutto and Mozzarella Grilled Cheese – Recipe!

Sandwich night just got better with this Pesto, Peach, Prosciutto and Mozzarella Grilled Cheese.  The flavors are tangy, sweet and savory all layered and toasted together.

I love a good sandwich on an evening where it’s too warm to heat up the kitchen, or I have extraordinary ingredients that would taste delicious all piled on good bread and grilled in a pan.  A fresh peach makes a grilled cheese so tasty.  It adds just a touch of sweetness and pairs so nicely with prosciutto and creamy pesto.  The mozzarella gives this sandwich it stretchability with each and every bite.  You’ll be lucky if it doesn’t land on your chin, but that’s half the fun.

It’s a quick fix meal that will remind you of summer and keep bringing you back after peach season is gone.  Slice it in half and serve with a crisp glass of white wine.

Ingredients

8 slices good bread

1/3 cup mayonaise

2 tablespoons pesto, either homemade or storebought

8 slices fresh prosciutto

2 large peaches

2 balls fresh mozzarella, about 6 ounces

fresh basil, optional

To Prepare:

  1. Place bread on board and slather with 1 teaspoon of mayonnaise and pesto.
  2. Remove skin from peach and pit.  Slice peach into 1/4 inch thick pieces.  Slice mozzarella into 1/2 inch thick slices.
  3. Layer 1 side of bread with prosciutto, mozzarella slices and top with 3-4 peach slices.
  4. Place lid on top and slather with 1 teaspoon mayonnaise.
  5. Heat a saute pan or griddle on medium heat and place sandwiches, mayonnaise side down.  Slather tops of bread with another teaspoon of mayonnaise and place lid on top of pan.
  6. Cook until deep golden brown and flip.  Cook until melted inside and cheese begins to bubble around sides.
  7. Remove and slice in half.  Enjoy!
