Happy rainy Sunday again!! Yes, the rain never ceases in Southern California and I never thought I would say those words. It’s been on and off all weekend long and if you’re like me, “I’m pretty much over it.” Not that I’m not thrilled of the abundant water supply, most of which we don’t capture down in the south, but I need sun. When you’re born and raised with mostly sunny days — you crave it, require it and can’t live without it. So, that being said, my menu this week will have a sunny outlook.
On Monday, it’s sandwich time with my Mediterranean Roasted Eggplant and Onion Sandwich. It’s packed with smoky flavors and the onions get so soft and creamy. You can make it in a grill pan if an outdoor grill is out of the question. Tuesday night is a rice dish that’s loaded with sweet and tangy flavors — Baked Cherry Tomato and Basil Rice. Instead of a classic pasta recipe, I baked similar ingredients in a casserole using kernels of rice. Wednesday night is all about Chicken Pesto Lasagna. The pesto sauce lightens things up a bit and it tastes much fresher using chicken. Thursday is a good day for my Greek Mini Turkey Burger Lettuce Wraps. Using lettuce instead of a bun adds crunch and a spring-like taste, while the Tzatziki sauce becomes a great addition. Friday night and it’s cocktail time — Vodka Grapefruit Rose Soda. Well, it’s spring and these flavors will perk your palate with a gentle touch. Saturday’s are for baking my Peanut Butter Brookies — a brownie and a peanut butter cookie in one.
