Happy or Hoppy Easter! I hope you’re day is filled with wonderful family, friends and chocolate bunnies. Tomorrow begins the month of April and don’t forget to play a fool’s joke on that special someone with a good sense of humor. The week starts with hopefully some warmer weather and then teeters back to rain in the ladder part. That’s not going to stop the menu from reflecting some spring-like meals.
On Monday it’s Skillet Chicken with Broccoli and Peppers — a one-pan meal that’s healthy and filled with protein and vegetables. Tuesday means taco night and this week we’re enjoying a vegetarian version – Cauliflower and Caramelized Onion Tacos with Avocado Mash. This Mexican meal is bursting with fresh flavors and I promise, you won’t miss the meat! Hump day is a good night for Roasted Asparagus with Herby Buttermilk Sauce. They pair so nicely with roast chicken, salmon or seared tofu. Thursday is Sheet Pan Mediterranean Turkey Meatballs with Hummus, Tzatziki and Pita. It will really make you feel like you’re on springbreak. TGIF and it’s time to enjoy some fingerfoods with cocktails or your favorite glass of bubbly, and these Crispy Parmesan New Potatoes with Basil Mayonnaise will surely pair nicely. Saturday’s are for baking — Blood Orange Cardmom Pound Cake because you can never get enough cake and citrus season is roaring right now. Have a lovely week. Cheers!
