Happy Sunday! Yes, I know many of us are a little more tired than usual because daylight savings has taken effect and we lost an hour’s sleep, but in my opinion, it’s well worth it. More sunshine later in the evening, offers al fresco opportunities and soon a change of seasons. I’m already craving more grilled meats and vegetables and wearing shorts — remember those?? Jacket season has been long for us here in Southern California with all the rain, and I’m ready to put them in the closet until the end of September.
This week the menu is inching closer to springtime and I can’t wait. On Monday, it’s Buttery Cracker Crusted Halibut for dinner and I love the crust because it’s crunchy and contrasts the beautiful soft tender fish. It’s a simple meal that’s so tasty — even the non-fish lovers will enjoy it. Tuesday usually means tacos, yet I’m in the mood for Thai food, so my Thai Ground Pork and Green Beans will surely satisfy – I like to make it in a wok or large fry pan. Wednesday is soup night and my Green Minestrone with Green Onion and Parsley Pesto is so flavorful and truly gorgeous — you won’t be able to resist. Thursday evening is a great night to start thinking about St. Patties Day — so why not start with a big loaf of my Multi-Seeded Irish Soda Bread. It’s fantastic dipped into soups, stews or smeared with good Irish butter for breakfast. Friday night means you made it to the weekend and a good Shephard’s Pie makes a great comfort food meal. It’s made in a casserole dish and layered with whipped potatoes and finished in the oven. Saturday’s are for baking, but I thought a good Slow-Cooker Corned Beef with Roasted Cabbage and Potatoes seemed much more necessary. I roast the vegetables separately and serve them alongside a tender corned beef, that way they stay crunchy and super delicious. Have a tasty week ahead.
