It’s New Year’s Eve and many people are gathering tonight to bring in 2024. This year has been quite a challenge in so many ways for me, both personally and professionally. I’m glad to say goodbye to this year and I look forward to this next one. This blog means so very much to me and I appreciate all of you who read and cook along with me daily, weekly or just once in a while — it’s one of the biggest things I do that puts a smile on my face because I love to cook, bake and write about it, and I want to say thank you for subscribing.
We kick off the week with New Year’s Day — so I think an Instant Pot Smoky Southern Greens and Beans would really hit the spot and if you’re southern, add some blackeyed peas to the mix for good luck! On Tuesday, it’s time to kick-up flavor and my Pork and Potato Enchiladas Verdes. They are a quick and easy dish that will pack a zesty punch (maybe you can use some leftover pork to create them). You can make homemade tomatillo salsa or use store bought for a quick approach to this meal. On Wednesday it’s pasta night and warm casserole of Baked Chicken and Basil Rigatoni surely will make you and your family happy. Thursday evening is a great time to change things up and to head to Morroco with my Slow Cooker Morrocan Beef Stew. It’s hardy and flavorful with just the right mix of spices from your pantry. Since many are doing a dry January — I thought a big pot of my Chicken Vegetable Soup would give you something healthy to sip on. It’s packed with vegetables and chunks of chicken and it reheats beautifully for the weekend. Saturday’s are for baking and I’m not giving up on treats for the entire month, but maybe something a little healthier to satisfy those cravings like my Paleo Pumpkin and Walnut Muffins.
