I haven’t written one of these in over a month, due to my server issues, so I’m making this post a “summer special” because I have some catching up to do. This week is super duper hot here in Southern California and I’m sure it’s hot almost everywhere this week — and these meal ideas will help keep you cool in the kitchen.
Using an instant pot or slow cooker is always a good idea, but in the summertime it’s even smarter. On Monday, let’s do Instant Pot Chicken in Coconut Milk Adobo or Adobo Sa Gata, a delicious dish from the Philippines made with simple ingredients. The sauce is so tasty and it tenderizes the chicken beautifully. Tuesday is taco night, and these Grilled Chicken Tacos are made outside on the grill or in a grill pan on the stove top. The flavors are delightfully traditional. Wednesday is a fun and fabulous Summer Succotash made with vegetables you can find almost anywhere right now. It makes a great side dish or main course served with rice. During the summer there needs to be a sandwich night, and on Thursday we’re making Heirloom Tomato and Crispy Salami Grilled Cheese Sandwiches. These ooey-gooey delights are super fast, super fresh, while keeping the kitchen cool. TGIF and here are 9 Cocktails you need to make this summer. So, decisions need to be made on which one you make first. Saturday’s are using for baking, but it’s just too hot — so instead let’s create this delicious No-Bake S’mores Mud Pie. It’s one of my favorites because I am a huge ice cream and s’more lover and it fills both cravings in one. Stay cool, happy summer – I’m back.
