Remember those frozen concoctions we would buy at convenience stores or movie theatres either bright red or blue? This Spiked Watermelon Lavender Slurpee is a much much tastier adult version that will cool you off and make you want to grab a straw.
I’ve always loved a good frozen drink and especially on a hot summer evening when the sun just begins to set – the slurp of fresh watermelon with a hint of lavender will calm down the nerves and brings you to a happy place. The light and refreshing components of this drink make it an unusually delicious Slurpee and a big splash of vodka creates a “big person” drink.
The whole thing is pureed in a blender using frozen watermelon with the rind removed, and some simple syrup infused with lavender. A squeeze of lime adds freshness and balances the cocktail beautifully. You can make yourself one big drink with this recipe, or two medium sized Slurpee’s and share with a friend.
Ingredients
6 slices frozen watermelon + more for garnish
1/3 cup simple syrup (equal parts sugar and water cooked until boiling and cooled)
4 lavender flowers + more for garnish
juice of 1/2 lime
1/3 cup good vodka
(Makes 1 large or 2 medium cocktails)
To Prepare:
- In a saucepan, add equal parts sugar and water and place over medium heat. When it’s boiling, add 4 lavender flowers and turn off heat. Let flowers steep in syrup for 30 minutes. Strain and set aside.
- Cut off rinds of watermelon and cut into large chunks.
- Place watermelon in blender, along with simple syrup, lime juice and vodka.
- Blend until creamy smooth. Pour into a big glass or two glasses and top with more watermelon and lavender flowers. Don’t skip the straw. Enjoy!
