Spiked Watermelon Cooler – Recipe!

There isn’t anything more refreshing than watermelon on a hot summer day and a slice of cold watermelon as a snack, or with a meal, seems to always taste so good.  Watermelon can be used in many different recipes, and I have a few right here on my blog.  I have tossed watermelon into several salads, and blended it up in cocktails, and today I thought I would add another tasty drink to the menu, something cool made with watermelon.

Blending watermelon is a simple task in a blender or food processor, but some friends of mine gave me a new device that I thought I would share because it’s super fun to use.  It’s the BevRev.  It’s basically a handheld blender that is motorized by moving the base along the counter.  The blades turning naturally as you move it, and it doesn’t require any power.  Yesterday, when my electricity went off in the neighborhood, I thought it was the perfect time to try it out and yes, it worked beautifully.  So, if you’re an outdoorsy type – camper, boater, etc. and want some blending action wherever you are, the BevRev is for you.

Add watermelon, ice, lime juice, a splash of simple syrup and fresh mint leaves to a BevRev or blender, and blend until slushy, and pour into a glass.  That’s it if you’re drinking it virgin, but if you want to spike it up, add some vodka, and make it an adult kind of fun.  This watermelon cooler is so smooth and tasty and it’s really nice on a hot day or evening, especially somewhere outside under an umbrella.

Ingredients

1 cup watermelon, chunks

1 cup crushed ice

juice of 1/2 lime

1 teaspoon simple syrup

5 mint leaves, torn

2 ounces Vodka

(Makes 1 Cocktail)

To Prepare:

  1. In a BevRev or blender, add watermelon, ice, lime juice, simple syrup and torn mint leaves.
  2. Blend it up for 1 minute, or until slushy.  Add vodka (if spiking) and blend again for 10 seconds.
  3. Pour into a chilled glass or drink straight from BevRev.  Enjoy!
