Sheet Pan Mediterranean Lamb Meatballs – Recipe!

Just because summer has started, you don’t need to give up some of those comfort food favorites that are so simple to make indoors.  I’m not going all summer long without meatballs in my cooking repertoire and hope you feel the same.  Roasting meatballs in the oven on a sheet pan is a one-stop cooking method that works beautifully with all kinds of meat or vegetables without a lot of fuss or mess.

Ground lamb is a meat that is sometimes forgotten after springtime, but it shouldn’t be because it’s relatively inexpensive compared to rack-of-lamb, and it’s the right kind of protein to make burgers and especially meatballs.  Lamb Meatballs, when spiced up, have incredible taste and can hold their own without sauce – they can speak for themselves.

Adding a little Mediterranean flair to the mix doesn’t hurt either – a few warming spices and some sesame seeds add a fun twist to this recipe.  Scoop them out onto a sheet pan and roast, then broil in the oven for a few short minutes and you have yourself a delicious meal.  You can make this recipe for a crowd or freeze the remaining meatballs for another meal at a later date.    I like to serve them over fresh greens or sauteed vegetables to keep it light, but they would be marvelous on a soft Kaiser roll too.

 Ingredients

1 1/2 pound ground lamb

2 eggs

1 cup panko breadcrumbs

1/3 cup heavy cream

1 small white onion, diced

1/2 cup fresh parsley chopped, divided

5 tablespoons black or white sesame seeds, divided

1 tablespoon ground cumin

1 tablespoon kosher salt

2 teaspoons coriander

1 teaspoon red chili flakes

1 small jalapeno, minced

vegetable oil, like grapeseed or sunflower

To Prepare:

  1. Preheat oven to 450 degrees.  Line a half sheet pan with parchment and drizzle heavily with oil, set aside.  In a large bowl, combine all meatball ingredients except 2 tablespoons sesame seeds and oil.  Using hands – squeeze meat together gently to combine flavors.
  2. Scoop out golf ball size meatballs and roll between palms.  Place on sheet pan and roll in oil.  Sprinkle with remaining sesame seeds and drizzle tops with oil.
  3. Place in oven to roast for 9 minutes.  Remove and turn heat to broil.  Place under broiler 12 inches from heating element and continue to cook for 8 minutes.  Remove and let cool for 3 minutes, serve.  Enjoy!
