Smoothies are a quick blended drink to enjoy before rushing out the door to start your day. When I heard of smoothie bowls, I thought, “What,” eating a smoothie from a bowl? Yes, I know the concept is a little unique, but if you haven’t tried one, don’t knock it.
Smoothie Bowls are actually more satisfying because you eat them with a spoon instead of sipping them from a to-go mug. The idea of pureeing a blend of your favorite fruits, protein powder, a little nut milk and topping them with more fruit, seeds and nuts is very enjoyable – it’s more like your favorite old school cereal, but with a healthy kick.
Pineapple-Strawberry Smoothie Bowls are super easy to prepare and I think the combination of both fruits gives them a tropical flair – so you might want to put on your hula skirt during breakfast. To top them off, a nice combination of seeds & nuts gives them another note of fun.
Ingredients
1 cup diced pineapple
1 cup sliced strawberries
2 scoops vanilla protein powder
1 cup cashew milk, almond or rice can be substitued
1 tablespoon chia seeds
2 teaspoons honey
2 tablespoons slivered almonds
1 tablespoon sunflower seeds
1 tablespoon flaxseed
(Makes 2 Bowls)
1. In a blender, add two-thirds of sliced pineapple and strawberries. Add in protein powder, cashew milk, chia seeds and honey, puree for 1 minute. Add 2 big handfuls of ice and puree again for 2 minutes.
2. While smoothie is blending, add almonds, sunflower seeds and flaxseed to a dry skillet. Place over medium heat and toast, until flaxseed begin to pop – about 3 minutes. Remove from heat.
3. Pour smoothie into two bowls, and top with remaining fruit and toasted seed and nut mixture. Enjoy!
