My “bestie” is from Jersey and she always talks about a special crumb cake from the east coast. So, I took it upon myself to create a simple recipe that does her justice. This Jersey Crumb Cake is tender with a buttery crumb and a cinnamon topping that explodes with flavor.
The topping of crumbs is what sets this cake apart from other cinnamon coffeecakes — it’s made with melted butter and lots of cinnamon and sugar that’s scraped together with a fork, then additional flour is added to create super large crumbs. The cake is a classic yellow batter with sour cream and buttermilk added to keep it soft and supple. It’s all made in a single layer 8-inch square pan, which makes it easy to put together. I like to slice it up for brunch, dessert, or as a snack in the afternoon, but my favorite thing is to share it with my friends and family.

Ingredients
Crumb Topping
1 1/4 cups all-purpose flour – divided
1/2 light brown sugar
1/4 cup granulated sugar
2 teaspoons ground cinnamon
pinch of salt
1/2 cup melted butter
Cake
1 1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup salted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/3 cup sour cream or whole milk yogurt
1/4 cup buttermilk
(Serves 6)
To Prepare:
- Preheat oven to 350 degrees. Spray with baking spray or oil a 8 x 8 square pan with removable bottom.
- In a large bowl, combine 1 cup flour, both sugars, cinnamon and salt. Stir with fork and add melted butter. Continue to mix with fork, while adding remaining 1/2 cup flour to create large clumps. Set aside.
- In a stand mixer, cream butter and sugar for 3 minutes. Add vanilla and egg, mix for 2 minutes and scrape down sides. Add sour cream and buttermilk and continue to mix for 1 minute.
- Add flour, baking powder, baking soda and salt. Mix on low for 30 seconds just until it comes together. Remove bowl and mix by hand until completely combined.
- Add batter to pan and smooth out on top. Sprinkle crumbs over top of batter.
- Bake for 35-40 minutes or until a toothpick comes clean. Cool completely and remove sides of pan. Slice and serve. Enjoy!
