Kentucky Bourbon Pie – Recipe!

Happy Thanksgiving.  If you haven’t quite made all your desserts today, or you are enjoying your feast a little later and have some time for another dessert – don’t skip out on my Kentucky Bourbon Pie.  This pie is loaded with pecans and mini chocolate chips whirled in a thick caramelized syrup, then baked to perfect in a buttery crust.  It’s like a little bit of southern charm fell into your pecan pie for some nutty-chocolaty fun.

You can make a pie crust in a stand mixer or large bowl – or even use store-bought, if that’s what you prefer.  There’s no need to toast the pecans ahead because they are going to bake until deep golden brown, along with the chocolate chips and brown sugar syrup, until they become an ooey-gooey-chewy sensation.  This is one pie that deserves a spot on your holiday table.

Ingredients

1 pie crust, homemade or store-bought

1 1/2 cups chopped pecans

1 cup miniature semi-sweet chocolate chips or chunked chocolate

3/4 cup dark corn syrup

2/3 cup light brown sugar

1/2 cup granulated sugar

4 large eggs

1/4 cup melted butter

2 tablespoons all-purpose flour + more for rolling dough

2 tablespoons bourbon, any variety

1 teaspoon vanilla extract

1/2 teaspoon salt

To Prepare:

  1. Prepare pie dough with link above or unwrap pie dough from package and roll out into 11-inch circle on a lightly floured surface.  Fit into 9-inch pie pan and tuck edges under.  Crimp with as you like and add chopped pecans and chocolate chips.  Place in freezer, while you make filling.  Preheat oven to 325 degrees.
  2. In a saucepan, add corn syrup, brown sugar, and granulated sugar.  Place over medium heat and stir until lightly bubbling and sugars are melted.  Remove and let rest.
  3. In a stand mixer or large bowl, whisk eggs until frothy.  Add butter, flour, bourbon, vanilla and salt.  Slowly pour sugar syrup mixture into bowl, while mixer is running on low.  Mix for 1 minute.
  4. Pour mixture over pecans and chocolate chips in crust and bake on a sheet pan in the oven for 45-50 minutes, or until almost firm.  Remove and let cool to room temperature.  Serve with whipped cream or ice cream.  Enjoy!
