Cornish Game Hen for Two!

Cornish Game Hen or broiler chickens as they are sometimes called, are perfect for two because of their size and ease of cooking.  Most of the time Cornish Game Hen are a bit pricier than regular chicken because they have a shorter growing span, but well worth it because they are succulent and juicy after roasting.

Preparing a hen is as simple as rubbing it with butter and sprinkling with salt and pepper.  Roasting vegetables alongside a Cornish Game Hen are ideal because they pick up the natural juices from the bird.  I prefer braising leeks and carrots in the same pan because they tenderize and  make a nice accompaniment with the poultry.

Cornish Game Hen for Two are a nice holiday meal, especially if you are spending it quietly with your significant other or that special someone.  Also, it is easy enough to make during the week when there are just a couple people staying for dinner.

Ingredients

2 pound Cornish Game Hen

2 tablespoons butter, room temperature

2 leeks, washed and sliced in half

4 carrots, washed and peeled

1 bulb garlic, cut in half

1 1/2 cup chicken broth

salt & pepper

1. Preheat oven to 425 degrees.  Rub hen with butter on all sides.  Place garlic inside of cavity and tie legs together with string.

2. Generously sprinkle with salt and pepper.  Add leeks and carrots to the roasting pan and pour broth over the top of vegetables.

3.  Roast in the oven for 45 minutes, cover with foil and roast another 20 minutes.

4.  Remove from oven and let rest under foil for 15 minutes before carving.  Serve with vegetables and your favorite wine.  Enjoy!
