Mexican food is one of my favorite things to eat and with all the taco trucks around Los Angeles, it’s hard not to find some amazing cuisine. However, there are days where I just want to make my own Mexican food at home, especially with a little seasonal produce added to it. I love to create traditional recipes, but with a slightly refresher twist; like these Chicken, Cheddar & Sauteed Zucchini Quesadillas.
This recipe couldn’t be more simple, but that’s what makes it so good. These Chicken, Cheddar & Sauteed Zucchini Quesadillas are perfect to eat as a quick dinner, light lunch or slice up into wedges and serve as an appetizer with margaritas. I think you will really enjoy the zucchini — it really adds to the creamy texture without overpowering the delicious flavors. This is one recipe that your kids could definitely prepare at home with you.
1 zucchini, grated
4 ounces cheddar cheese grated
1 chicken breast, cooked
4 flour tortillas
1 jalapeno, diced
(Makes 4 Quesadillas)
1. Drizzle 1 teaspoon of oil into a non-stick pan and place over medium heat. Add the zucchini and saute for 3 minutes, until softened and just beginning to turn brown on the edges. Remove from heat and let cool for 5 minutes.
2. Grate cheddar cheese and shred chicken into bite-sized pieces. Remove the tortillas from any packaging and place one on the counter. Fill with 1/4 cup chicken, 1/4 cup cheese and 2 heaping tablespoons of cooked zucchini. Sprinkle with 1 teaspoon of diced jalapeno and fold in half.
3. Drizzle the same pan with 1 teaspoon of oil and place over medium heat. Place quesadilla in pan and cook for 2 minutes, flip over and cook for 2 more minutes. Repeat until all quesadillas are cooked. Slice in half and serve with your favorite salsa. Enjoy!
