Avocado Hummus – Recipe!

Making your own hummus at home is super easy to do, and if you happen to have an avocado that’s soon to go bad, let’s make something tasty, and create this Avocado Hummus.  You don’t need a lot of ingredients, just a few pantry items and an avocado that’s ripe and ready to go.

It’s one of the those dump and blend type of recipes (the best kind), where everything is added to the food processor or mini-chopper and anyway it goes.  The results are hummus that looks traditional, but has avocado flavors.  Sort of a mild guacamole dip, but with a fun nuttiness from the chickpeas.  I love the idea of combining healthy foods to make something even more special and this avocado hummus is a pure delight.  Serve with tortilla chips, pita chips or pita bread.

Ingredients

14 ounce can chickpeas, drained

1 ripe avocado

1/2 cup tahini, or sesame seed butter

1 teaspoon salt

juice of 1 lime

1/4 teaspoon chili paste, any variety

1/2 cup warm water

olive oil

Maldon salt, or sea salt

(Serves 4)

To Prepare:

  1. In a food processor, add chickpeas, avocado, tahini, salt, lime juice, and chili paste.  Pulse several times
  2. Add warm water and puree until smooth.  *you may need to scrape down sides and stir before adding all of water.
  3. Spoon into a bowl and drizzle with olive oil and sprinkle with salt.  Serve with chips or crackers. Enjoy!
